CERTIFIED SC RECIPE OF THE WEEK: WATERMELON, BASIL AND FETA SALAD

- 6 cups cubed Certified SC watermelon
- 2 Tbsp. lime juice
- 3 Tbsp. chopped Certified SC basil
- 1/3 – 1/2 cup feta, crumbled
- Coarse salt and pepper, to lightly season
- Place watermelon in a large bowl.
- Drizzle lime juice on top.
- Add basil and 1/2 of feta, and lightly toss.
- Transfer to a serving dish. Very lightly sprinkle with coarse salt and pepper.
- Add remaining feta on top.
